All Purpose Vegetable Stock

Makes approx 8 cups

See what vegys you might have in the frig needing to be used up.
Start with at least…

onions, 2 or 3
celery 1/2 bunch with leaves
fresh parsley
carrots 6 or 7
6 to 8 cups of chopped lettuce (using outer leaves or leaves with a little brown works fine)

other vegys that work well are….

eggplant
green cabbage
squash, green or yellow (winter squash will give a definite orange color)
green beans

if you add….
kale –  it will give a very strong flavor, use for soups with kale
red or green pepper  – also will give a strong flavor, use for hearty dishes

Fill the largest pot you have with as much vegetation as you can, then add water to within 2 inches of top. Cook on a low boil for 3 hours. Strain off with fine strainer. Freeze or use within one week.
